Kostas has managed to uphold a 65-year-old tradition, serving the one of the best souvlaki in Athens. Today, it is run by his grandson (you guessed it) Kostas junior and it seems the secrets have been passed along too.
Kostas brings his version of souvlaki by taking a dry, grease-free pita, spreading it with Greek Tzatziki and then sprinkling a handful of onions on top. He adds slices of tomato, parsley and finishes off with a dash of salt and paprika to taste. He has been making this same dish for decades, and with good reason as this one is hard to beat.
